Dehydrated Zucchini

Oh zucchini, the never ending summer vegetable. About mid summer, everyone and their mother has zucchini. What do we do with it all? One solution is to dehydrate it. I seem to dehydrate it very often to save for winter. Dehydrated zucchini is great to have on hand when making soups and smoothies. Sneaking in vegetables, with a picky eater, is sometimes all we can do. To make it even easier, I also blend up the dehydrated zucchini into zucchini powder.

How to dehydrate zucchini

Dehydrating zucchini is simple with the right tools. I use my dehydrator but the oven on a low temperature will work as well.

Wash 3 medium zucchini.

Cut zucchini ends off and then cut lengthways.

Shred zucchini with cheese grater or shredding machine. I use an older version of this Ninja blender.

Place zucchini pieces on dehydrator racks. I use the liquid inserts for less cleanup.

Turn dehydrator on to 135 degrees for about 24 hours. I use this Nesco dehydrator.

Check the zucchini. If the pieces are bending, it needs more drying time. If the pieces come out dry and break like a chip, they are ready.

Allow zucchini to fully cool before placing in container. I seal the container with a manual hand-pump to get out all the air.

Label and date container, storing in dark, room temperature place. When ready to use, open container and reseal when storing.
