In the summer time, in Zone 5, it is easy to find freshly grown tomatoes. Whether it is from your own garden, a local farmers market or someone has way too many and you decide to take them off their hands. Fresh tomatoes can be made into many things. Today I am making a basic tomato sauce with a crock pot. This sauce will be good to use in pastas, top on pizza or even in a casserole. To make the sauce unique for the meal, simply add different seasonings to your dish when preparing. Cut the ends and bad spots off of the Roma tomatoes. Other tomatoes can be…

    Dehydrated Zucchini

Oh zucchini, the never ending summer vegetable. About mid summer, everyone and their mother has zucchini. What do we do with it all? One solution is to dehydrate it. I seem to dehydrate it very often to save for winter. Dehydrated zucchini is great to have on hand when making soups and smoothies. Sneaking in vegetables, with a picky eater, is sometimes all we can do. To make it even easier, I also blend up the dehydrated zucchini into zucchini powder. Dehydrating zucchini is simple with the right tools. I use my dehydrator but the oven on a low temperature will work as well. Wash 3 medium zucchini. Cut zucchini…

Honey, Oatmeal and Chocolate Chip Bars

I like having a bar that is easy to make and enjoyed by the kids. One of my daughters doesn't care for peanut butter in her bars. Just a hint of peanut butter and she will know. I didn't see many options online that didn't have peanut butter, so with a lot of experimenting, I finally figured out how to make what she was looking for. It is mostly oatmeal but on the sweeter side. When muffins and waffles are not available for breakfast, these honey, oatmeal and chocolate chip bars are easy to make. They are chewy chocolate molasses flavored with a slight crisp crunch from rice cereal. Measure…

    Gardening in May (Zone 5)

Compared to gardening in April, May is a busy month here in the Midwest. Gardening in May is mostly direct sowing melon, cucumbers, and squashes and getting many transplants into the ground. My last frost date is around May 15th but with a little protection, almost all warm season crops can be started right away. I try to do bare minimum by just waiting the extra week and plant seeds after the frost date has passed and the overnight temp is around 50 degrees or more. Gardening in May is either fairly easy with minimal plants or the longest month yet, with many different varieties of produce. I started small…

Sourdough Sandwich Bread with Hard Red Wheat Berries

My kids love to eat peanut butter jellies as much as any other modern child. Unfortunately, I had given them the store bought bread for years before I found out about the health benefits of sourdough and freshly milled flour. So I set myself on a mission to make the perfect sourdough sandwich bread. Using my sourdough french bread recipe with a little more honey and oil worked amazingly. The loaf comes out soft and fluffy with that chewy texture the kids wanted. This…
