Honey, Oatmeal and Chocolate Chip Bars

I like having a bar that is easy to make and enjoyed by the kids. One of my daughters doesn't care for peanut butter in her bars. Just a hint of peanut butter and she will know. I didn't see many options online that didn't have peanut butter, so with a lot of experimenting, I finally figured out how to make what she was looking for. It is mostly oatmeal but on the sweeter side. When muffins and waffles are not available for breakfast, these honey, oatmeal and chocolate chip bars are easy to make. They are chewy chocolate molasses flavored with a slight crisp crunch from rice cereal.

How to make honey, oatmeal and chocolate chip bars

Measure out 200 grams of quick oatmeal or dried and blended freshly rolled oats and 40 grams of puffed rice cereal into a large mixing bowl. Rice cereal can be any type as long as it is crushed into small bits about the same size as the oatmeal. I have been making my own rolled oats and puffed rice for increased nutritional benefits. Freshly rolled oats do have more of a nutty flavor and more oils for more flavor than store bought oats.

Measure out 100 grams of dark brown cane sugar and 6 tablespoons of butter. Salted or not doesn't matter.

Over low heat, whisk together butter and sugar for around 3 minutes. Sauce should be boiling and creating a caramel like texture. Turn off heat and add 1 teaspoon of molasses and 1 teaspoon of vanilla extract. Stir well.

Pour caramel like sauce over oatmeal and cereal. Stir until slightly combined.

I add 75 grams of honey and stir until completely combined.

Adding honey after the hot caramel sauce helps by not allowing the honey to get above 110 degrees and keeps the benefits of honey intact. Heating honey with the sugar does create a firmer bar but I rather have the health benefits from raw honey in my bars.

Next add 110 grams of chocolate chips.

When added, consider two options. One, add right away when mixture is still warm enough to melt the chips, creating a sturdier bar. Two, add after mixture is slightly cooler but not cold, creating a bar that falls apart when at room temp.

Once mixture is well combined, pour it into a parchment lined 8x8 or 9x9 baking pan.

Press firmly with utensil or fingers until bars are in place. The more compacted, the less likely the will crumble at room temp.

Place pan into fridge for at least 30 minutes to set. I keep these bars in the fridge until ready to eat.

Store in an air-tight container or cut and freeze for later.
