Soft White Wheat Waffle
Soft and fluffy waffle with a crispy outside. A soft white wheat waffle made with freshly ground flour, sweetened with honey. I eat these waffles for breakfast, lunch or dinner. Paired with bacon and eggs, chicken or even fresh fruit. This soft white wheat waffle recipe even works great as a pancake recipe when needed.
I use freshly milled flour in all my current recipes. There are many different types of wheat berries that taste great in various homemade goods. With waffles, pancakes or even muffins, I use soft white wheat. This is because batters don't need the higher protein that bread dough needs for a good rise. Soft white wheat flour recipes are usually risen by baking powder or baking soda instead of yeast.
Freshly ground flour is a much healthier option than store bought flour. Not only does fresh flour provide many vitamins and minerals that store bought flour does not but it is easier to digest. I like eating my waffles with different toppings. Chicken and waffles pair nicely together and is different from the traditional bacon and eggs. Most of the time I will drizzle local honey or real maple syrup on my waffles but I do, also, use a cane sugar/ molasses syrup with grass fed butter for a sweeter treat. The butter in the syrup adds that creamy goodness I sometimes crave.

How to make soft white wheat waffles
First measure out 200 grams of soft white wheat berries.
Set the mill to the finest setting. I either mill wheat berries into flour and set aside or wait and mill it straight into the mixing bowl with the wet ingredients.

Preheat waffle maker to desired setting.
All my waffle makers are just plug in and turn on. I have flat, bowl and snowman waffle makers. Today we used the bowl type to fill with fresh fruit. It's the Presto Bowl Waffle Maker from Amazon.

In a large mixing bowl, combine 1 egg, 3 tablespoons of oil and 1 tablespoon of honey.
Mix with a whisk so oil is well combined. I like to think of it like making a dressing to start.
Mixing the oil and egg together first helps combine the oil so it doesn't try to separate later.

Next I stir in 304 grams or about 1 and 1/4 cup of whole milk.

Either fold in 200 grams of previously freshly milled flour, 1 teaspoon of salt, and 3 &1/2 teaspoons of baking powder or directly mill the flour into wet ingredients.
Be careful so the batter doesn't go into the mill, as it can ruin the mill.
Mix until combined. Allow the batter to sit for about 5 minutes to absorb the liquid.

Now pour the waffle batter into waffle maker to the premeasured lines or amount needed to not over fill waffle machine. Sometimes this is a trial and error. I tend to under fill more than over fill so I don't have batter running down the outsides of the waffle machine.
Cook waffle until golden brown and done. This may take 3-4 minutes, I check at about 3 minutes.
Take waffle out of machine. Then add more batter into machine to make another waffle.
Continue to make waffles until all the batter is used up.

Add desired toppings or eat plain. I have topped with strawberries, blueberries and local honey.
Waffles will freeze nicely. Maker sure the waffles are cooled completely off before adding to freezing container.
When ready to eat pre-frozen waffles, reheat in waffle maker, toaster or air-fryer for a crisper waffle.

7. Pour waffle batter into waffle maker to premeasured lines or amount needed to not over fill waffle machine.
8. Cook waffle until golden brown and done.
9. Take waffle out of machine. Add more batter into machine to make another waffle.
10. Continue to make waffles until batter is used up.
11. Add desired toppings or eat plain.
12. Freeze completely cooled waffle leftovers if needed.
13. When ready to eat pre-frozen waffles, reheat in waffle maker, toaster or air-fryer for a crisper waffle.
