Vanilla Ice Cream
I always thought I needed a fancy ice cream maker to enjoy fresh ice cream. Turns out, I did not need one. If you have a freezer, cream, and sugar you have the base for many different kinds of ice cream. In this recipe, I will be making the family favorite, vanilla! It is great for our family because we can add any topping we want and everyone can enjoy a fresh scoop of rich delicious vanilla ice cream.
Now this is not the healthiest way to make ice cream but it is easy and tastes amazing. I use heavy whipping cream, sweetened condensed milk (homemade or canned), and vanilla extract. For every 2 cups of cream, use 14 ounces (1 & 3/4 cup) of sweetened condensed milk. Vanilla used is based off preference. I use 2 tablespoons for every 2 cups of cream.
How to make vanilla ice cream

Start by adding 2 cups of heavy whipping cream to a large bowl. Using a hand or stand beater, whip cream until light and fluffy. It should be literal whipped cream. I use the Kitchen Aid Artisan Stand Mixer.

Next add 14 ounces (1 & 3/4 cup) of sweetened condensed milk. Mix together slowly until completely combined. Using the sweetened condensed milk helps the texture be creamier rather than using just plain sugar.

Then add 2 tablespoons of vanilla extract. Combine well but not to over mix. We want to keep the whipped cream light and fluffy.

Lastly, pour the ice cream mixture into a freezer container. Place plastic wrap directly on the ice cream to prevent a crust when it is freezing. Cover with an air tight lid.

Place container of ice cream into the freezer. I allow it to freeze at least overnight.
As long as it is stored in the freezer, it will last up to 6 months. Mine has never lasted that long.
Note: Making double or triple batches is just doubling or tripling the recipe. Many times I will make a double batch and put it into a gallon pail. Freeze time is still at least over night.

Vanilla Ice Cream

Ingredients
- 2 cups heavy whipping cream
- 14 ounces (1 & 3/4 cup) sweetened condensed milk
- 2 Tablespoons vanilla extract
Instructions
- Pour cream into large mixing bowl.
- Whip cream until light and fluffy
- Add sweetened condensed milk and mix until combined
- Add vanilla and mix. Trying not to over mix to keep the cream whipped.
- Pour ice cream mixture into freezer container.
- Cover with a plastic wrap directly onto the mixture to prevent a film from developing.
- Cover container with an airtight lid.
- Place container in the freezer at least overnight to firm up.
- Enjoy!
